Cherry wood smoked carnaroli rice, blended at the end with green broccoli from Torbole cream, powdered broccoli and broccoli rabe leaves; pike-perch and sea-bass bites the former a freshwater fish, the latter a saltwater one - and a sweet bagna cauda with added white chocolate and Aglio Bianco Polesano.

THE EGG. ODE TO THE VENETO COUNTRYSIDE AND THE FLAVOURS AND AROMAS OF THE FOREST
Cooked at low temperature, the soft egg is suspended between the subtlety of the Jerusalem artichoke cream and the crispy BBQ cooked onion. Shrouded by a light fondue of Salva Cremasco Dop and enriched by the aroma and flavour of black truffle, powdered porcini mushrooms and Jerusalem artichoke chips.
